Chef Carme Ruscalleda, special guest at the UA's Carmencita gastronomic days

The Carmencita Chair of the University of Alicante will hold the seventh Interdisciplinary Studies on Gastronomy conference next Monday, October 14, at the Alfredo Orts Graduate Hall in the Optics building.

The event will focus on the recovery and updating of Mediterranean culinary heritage under the title 'The Taste of Tradition. Challenges and Opportunities in the Recovery of Culinary and Gastronomic Heritage'.
The day will feature prominent professionals and researchers. Notable is the renowned chef Carme Ruscalleda, the first Catalan chef to obtain three Michelin stars, who will give the inaugural lecture 'Cooking is pure inspiration and respect is key'.
Alongside the chef, experts such as Francesc X. Medina, professor of social anthropology and director of the UNESCO Chair of Food, Culture, and Development, and Rafael Moreno Rojas, professor of Bromatology and Nutrition at the University of Córdoba, will delve into the challenges posed by the current global food model and the opportunities that traditional gastronomy offers as a sustainable and healthy alternative.
The program also includes a gastronomic tasting and a sensory experience titled 'Blat picat, a gastroendemism from the interior regions of Alicante', which will highlight the culinary heritage of the region.

The VII Carmencita Days offer a space to reflect from an interdisciplinary perspective on the revaluation of traditional Mediterranean cuisine and its impact on health and food sustainability.
