Juanjo López's "La Tasquita de Enfrente" has emerged as the winner of the inaugural National Steak Tartare Championship at Madrid Fusión Alimentos de España. This was one of the new features introduced in this edition. While it cannot be said that this dish, which gained fame in 20th-century France, is more popular than a croquette, it is certainly rare to find a restaurant that does not offer it on their menu.
Similarly, it is unusual to find it without much seasoning. This is precisely what led this Madrid-based restaurant to clinch the prize in this first edition. "It's a tartare that goes against the grain of what a tartare is; ours has no seasoning," revealed the chef, who assured that it is not a dish they have on the menu 100% of the time because they change it frequently.
To win the contest, they engaged in a reflective exercise and seasoned it with the cow's own fat and a bit of cheese, which adds a matured touch "that is so popular in meats." In other words, this chef sought to highlight the flavour of the meat. This secret led him to triumph over six other contestants: Lorenzo Franco Chaparro - Zalacaín (Madrid); Ramon Blanch - Pur (Barcelona); Daniel Gómez - Leña (Madrid); Nacho Gadea - Askuabarra (Madrid); Manu Villalba - Fismuler (Madrid).
