Following the traditional recipe and adding, above all, a lot of love and care. These have been the keys for La delicidas de Gala's 'coca amb tonyina', located at Avenida del Cardenal Francisco Álvarez del Pau 2, to be crowned the best at the Hogueras of Alicante 2025.
Suni, the owner alongside her husband of this bakery - proudly named after their daughter - admits to being "super happy" after winning this award granted in the contest organized by the Guild of Bakers and Pastry Chefs of the Province of Alicante and FACPYME, in collaboration with the Alicante City Council.
"I tell everyone, I'm better than if I had won the lottery," she expresses with great satisfaction after a long day of work. This profession is "very demanding" and receiving this award is a recognition of her career, as well as visibility for small businesses.

In her case, she acknowledges that Las delicias de Gala is very well received among the neighbors of the La Torreta neighborhood. "It's very much a traditional bakery." However, their 'coca amb tonyina' from Alicante has already made them known throughout the city.
During this Friday's day, Suni acknowledges that she has already sold more than 200 'cocas amb tonyina', while she has gathered many more orders for Saturday, Sunday, and the main week of the Hogueras of Alicante.
The message has been taken from both neighbors and regular customers, as well as residents from other neighborhoods and outside the city. "The phone doesn't stop ringing, while people come to buy their 'coca amb tonyina'."
The same happens with her oven, from which units keep coming in and out. Among the curiosities of receiving this award, linked to the commitment to her craft, is the long Friday dedicated to this Hogueras dish.
More awards in the 'coca amb tonyina' contest of Alicante
The contest for the best 'coca amb tonyina' in Alicante was divided into two categories. On one hand, the traditional one that crowned Las delicias de Gala as the winner, followed by Angelita bakery and La Levantina. Additionally, this dish also has a gluten-free version, whose prize went to the Vegan Bombón bakery. The Councillor for Hospitality, Commerce, and Markets, Lidia López, highlighted "the great participation in this contest," which featured 22 participating businesses. "The jury had a very hard time choosing the best 'coca' because the quality of all of them was exceptional."
"We've been in the shop since three in the morning." She has barely slept a couple of hours, as after learning about the award she left her daughter Gala at her grandparents' house and hasn't been able to pick her up yet. "My husband came to help me."
Despite the fatigue, the effort prevails and, above all, being "immensely happy" for cooking the best 'coca amb tonyina' in Alicante, valued by a jury composed of professionals, the 'bellea del foc', and citizens who selected from among 25 participants, in another contest by Elena Vidal (@alicantestreetstyle).
About this 'coca amb tonyina', Suni - from Las delicias de Gala - explains that it is based on the traditional recipe: hand-shredded 'zorra' tuna, onion sauté with parsley and pine nuts, the dough, and, as she emphasizes, a lot of love among the rest of the ingredients.
