Rice dishes and culinary delights from the sea were the first creations at the most important fair in the sector

Alicante has presented itself as the Spanish Capital of Gastronomy at Madrid Fusión, the most important fair in the sector in Spain and one of the most influential internationally. The city has strong arguments to conquer the most demanding palates, with its mix of gastronomic richness and culinary innovation from its chefs. Alicante showcased four 'showcookings' on the first day to exhibit the best of its cuisine, creating innovative dishes that have been fused with the star dish and symbol of the region, which are its Alicante rice dishes.

Chef Alejandro Torres captivated the attendees at the fair with his showcooking, preparing a 'Nikkei marinated red tuna on loquat gazpachuelo from Callosa in syrup'. This dish skillfully combined Mediterranean cuisine and innovation with Japanese elements, while chef María Luisa Rivera presented her 'Alicante Bay Squid in its Ink', paying homage to the freshness of our local sea products.

Similarly, the stars were once again the Alicante rice dishes. Juanlu Parra impressed with his 'Creamy rice with blue duck, smoked eel, death trumpets, and melanosporum truffle', an exquisite dish that highlights the ability to offer creative cuisine with our rice as a flagship. Finally, to close the program, chef Nicolás Cortina prepared an exquisite 'Tuna, artichoke, and garlic shrimp rice', with products from the Alicante garden and the taste of the sea.

Likewise, The Whisper Cocktail Company, with José Manuel Ramos and Hector Castelló, also shone with their cocktails Moscow Mule, Singapore Sling, Terreta Roasted, La llorona, or Green and Fresh.

The Alicante City Council attended this international showcase alongside the sector with Aphea, ARA, and Alroa. This marks the beginning of a year full of celebrations and events that will make Alicante the epicenter of cuisine as the Spanish Capital of Gastronomy and an essential destination for food lovers.

The Councillor for Hospitality, Commerce, and Markets, Lidia López, highlighted that "our city has exceptional gastronomic wealth and top-level professionals who have surprised today with their techniques and creativity. This year, with the capital status, we have the opportunity to show the world what makes us unique and position ourselves as a quality destination with a culinary offer that establishes us as an international reference with the varieties of rice."

At the fair, Councillor Lidia López emphasized that "this fusion offers innovative quality cuisine that makes a difference and makes it exceptional. Our gastronomy has managed to position itself and blend creative and modern techniques of avant-garde cuisine while maintaining the essence of its culinary tradition."
